2013 | ANTH101 Introduction to Anthropology
For my anthropology class my sophomore year, I had to do a cultural experience assignment. This involved interviewing a foreign student who was not currently enrolled in the class and who we did not know well. I had met a Chinese girl during one Nutrition and Dietetics Club meeting, and she agreed to be interviewed for my assignment. Through this assignment, I learned about the rigidity of the Chinese culture and the pressures placed on youth to be successful. Understanding cultural pressures will be useful in nutrition counseling as well as general interactions with individuals of Chinese descent.

2014 | NTDT330 Nutrition Counseling
For my Nutrition Counseling Class, we had to do a group project and create cultural foods presentation. My group chose to research Indian cuisine. Part of the assignment included making a fact sheet about the culture and things that would be good to know as an RD counseling an Indian client in the future.

2014 | NTDT330 Nutrition Counseling
For my Nutrition Counseling Class, I had to do a "Modified Diet Assignment." I had to pick a special diet from the Nutrition Care Manual and try it out for several days, and I chose a gluten-free diet. Almost two years ago, I had been experiencing intestinal pain and severe joint pain and was placed on medication to manage these issues. Ironically enough, I experienced several months of severe illness prior to taking this class. A short time after writing this paper I discovered I was having allergic reactions to gluten, and have been gluten-free since January 2015. Through this experience, I can better understand the complications of Celiac disease and the importance of dietary restrictions.
