UNDERGRADUATE PROJECTS

In this section, I would like to highlight some of the academic and extracurricular work I completed during my 3.5 years at the University of Delaware.

June-July 2013 | Volunteer in Diet Office

I volunteered in the diet office of Crozer Chester Medical Center in Upland, PA during the summer of 2013. The RD there gave me the task of starting a coffee cart to go around to different rooms for patients mid morning about an hour and a half after breakfast and two hours before lunch in order to increase patient satisfaction at the hospital during their stay. I was given a list of patient names and room numbers, as well as their current diet order. This was a great experience interacting with clients but also being mindful of their diets and what they were and were not allowed to have.

Cards for People on Meals on Wheels

From my sophomore year to my senior year I held an event to make Thanksgiving cards for individuals currently receiving meals with Meals on Wheels so they would receive a card with their meal on Thanksgiving. It become an integrated part of the living learning community I mentored.

Thank you letter from Senior Center

Here is a letter from Fall 2014 thanking me for making Thanksgiving cards for 120 individuals receiving meals on Thanksgiving that year.

Healthy Smoothie Night

In celebration of National Nutrition Month in March, I made my students healthy smoothies and did some nutrition education about the vitamins and minerals found in different fruits and vegetables.

Meditation

Occasionally I will hold events a week or two each month called "Meditation Mondays" where we will all focus on mental and physical wellness by listening to a guided meditation to relax from the stresses of school.

Another student in my community who came to my National Nutrition Month event. I am proud to say that after being in my community for a year, she has now become a Resident Assistant on campus.

In June 2015 I was asked to create posters to place in the atrium of the hospital to let parents and kids know an aquarium was being built. The posters were to encourage kids to come upstairs to the Child Life activity center and decorate a fish to be put on the temporary wall. It was a huge success, as kids eagerly came to the center to put their own decorated fish on the wall.

Fall 2014-Spring 2015 | Peer Mentor Activities
 

These pictures were taken at different events I have held are to give a snapshot of what the Wellness Living Learning Community I run is all about. It encompasses nutrition through wellness, with the purpose of helping freshman students transition to college in a healthy manner.

February 2015 | Understanding Serving Sizes
 

As a teaching assistant for a Nutrition Counseling class, I created a presentation on serving sizes with another TA. We taught the students the difference between serving size and portion sizes, and how portion sizes have dramatically increased over the past 50 years.

Spring 2015 | Cognitive Impairment, Dementia, and Alzheimer's Disease

In the spring of 2015 in my Nutrition Through the Lifecycle class, my group and I chose to do a project on Cognitive Impairment, dementia, and Alzheimer's Disease. I particularly wanted to choose this topic because my mother's best friend was diagnosed with Alzheimer's at the age of 50. Being educated in the signs/symptoms, development, and progression of Alzheimer's disease, dementia, and cognitive impairment will be crucial in understanding them better to be an effective dietitian.
